Eggless Banana Cake - With or without Oven

 Ingredients:

  • Banana - 2 big bananas or 4 small bananas; make sure they are well ripe.
  • Sugar - 3/4 cup
  • Curd - 1/4 cup
  • Oil - 1/2 cup; preferred vegetable oil, but you can always use oil that your taste buds like. I prefer a quantity less than 1/2 but more than 1/4.
  • Vanilla Extract - 1tsp
  • Milk - as per requirement; at normal temperature.
  • Wheat Flour - 2 cup; you can use maida/plain flour for more softer cake. you can take 1 cup wheat flour and 1 cup maida as well.
  • Baking soda - 1/4 tsp
  • Baking powder - 1tsp
  • Cinnamon powder - 1 tsp; I skip this at times.
  • Salt - a pinch
  • Chopped Walnuts/choco chips/cashewnuts/raisins/tutti frutti - 1/2 cup; choose anything you want, you can skip as well if you are ok with plain taste.


Batter Preparation:

1. Take a bowl and mash the bananas well. You can take your toddlers help for this.😊

2. Add sugar and mix well. I observed that if we do this mixing well, then the taste improves. Sugar will gradually melt in the banana, also helps in getting the banana mashed well.

3. Add curd, oil and Vanilla Extract and mix well.

4.Seive wheat flour/maida, baking powder, baking soda, salt, cinnamon powder and add it to banana mixture. 

5. Mix well, do not over mix

6. If you feel batter is thick, then add milk to get cake batter consistency. Wheat batter is more thick compared to maida batter. Also more ripe the banana is; better the batter and taste.

7. Add the choco chips/ chopped walnuts and mix once.

7. Transfer the batter to cake tray or bread mould.

8. Pat the tray to remove the incorporated air


Cooking in Oven:

Place the cake tray in pre heated oven and cook for atleast 50 minutes, it can go upto 60 minutes as well. A tooth pick inserted should come out clean if cooked well.


Cooking without Oven:

You can steam the cake as well. Use the Idli vessel or any steaming vessel. Boil the water in the vessel(just like you do for Idli). Place the cake tray/bread mould on the steaming plate. You can cover the cake tray using Aluminum foil and prick holes on foil. I used a normal lid with holes in it, it worked well. I tried without any lid as well, even that came up well. Make sure the tray is placed only after the water is boiled.


When cooked, allow it to cool completely(patience is a must at this stage especially if you have kids). Take out of tray and server it as evening snacks, tiffin box snacks.

Banana cake is ready!
